Recovery of Retail Food Operations

Pursuant to Chapter 24, Retail Food Operators shall make contact with the Health Department before receiving product or re-opening. For questions, information and/or to contact us regarding re-opening your food establishment please email us at lbihd@lbihealth.com. 

 

 

A.  Destroy or discard out-of-temperature food.

                                I. Or, show evidence (time/temperature log) that food was kept at or below 41°F.

 

B. Be able to demonstrate to the inspector that all affected equipment is operating properly.

                                                         I.            Refrigerators  minimum 41°F and freezers  15°F  .

                                                        II.            Hot water supply min 120 °F.

                                                       III.            Sanitizer and High Temp Machine

                                                      IV.            Restroom and adequate plumbing facilities

B. Cooking equipment and Food Contact Surfaces

                                                          I.            Clean and sanitize all affected equipment

                                                         II.            Cooking equipment

                                                        III.             Dishwashers

Food establishment owners pursuant to Chapter 24 shall make contact with the Health Department before receiving product and re-opening.  Contact the Health Department prior to re-opening to schedule a brief site visit.

Certified Food Protection Manager Guidance 

By January 2, 2010, at least one person in charge of Risk Type 3 food establishments shall be a certified food protection manager who has shown proficiency of required information through obtaining a food safety certificate by passing a food safety certification examination administered by an accredited certifying program recognized by the Conference for Food Protection.”

Note- To find out if your establishment is “Risk 3” refer to your most recent inspection cover sheet.
